Chef Thomas Danigo, who has been in charge since day one, recently opened the restaurant for the legendary La Ponche Hotel in Saint Tropez. He now offers a gastronomic menu at Galanga Paris with the desire to express and sublimate the richness of the land. Thus initiating a new adventure for Galanga.
In a warm décor with shades of green, designed by Anouska Hempel, we sit in the dining room of a Turkish-Moroccan-inspired palace.
Thomas Danigo cooks by instinct and honors the vegetal world. Vegetables, fruits, tubers and flowers are prepared according to modern cooking methods and the cooking techniques of our ancestors: macerations, fermentations or cooked directly over the flame. The vegetables are directly grilled or caramelized to sublimate their flavors while keeping the right taste. The chef and his brigade work with flames in different ways, using for example the Japanese barbecue "Konro" where meats or fish are grilled. The burned leek is combined with guanciale and pecorino. Chef Thomas Danigo offers a cuisine that reflects his love of products coming from the land, the sky and the sea. The plates are refined, surprisingly composed and colorful. They are sublimated with spices, peppers and condiments from elsewhere.
