Sustainable development approach

Awarded EcoTable label: level 3, and Michelin’s Green star. ------------------ The restaurant uses renewable electricity instead of natural gas. The bar and tables are made of French oak in produced the greater Paris area (91), chairs are made from wood, metal and French fabrics produced in area 93. Plates are made of glass, wood, cement and Greek pottery. The bar features micro-filtered water, draught beer only, no bottles or cans, 100% homemade juice, syrup, tonic, ginger ale and limoncello. In the kitchen, bread is homemade from organic Île-de-France flour, Île-de-France vegetables and seasonal produce. Bio-waste is recycled and cleaning products are biodegradable.
