Aromas from childhood, audacious flavours with unexpected combinations, classic, traditional, or poetic, magical or eccentric … In 2022, the signature gourmet logs of Parisian master pastry chefs offer many a surprise.
HÔTEL SHANGRI-LA

Maxence Barbot, the head pastry chef at the Shangri-La Paris, showcases the most poetic symbol of Christmas: the star. The Yule log Étoilée in the shape of a star anise flower with eight petals, is filled with a Peruvian milk mousse and a hint of aniseed, combined with biscuit and crispy chocolate and a hint of zingy freshness provided by a clementine marmalade and confit of lyokan, a Japanese citrus fruit.

HÔTEL PARK HYATT PARIS-VENDÔME

Naraé Kim, the head pastry chef at the Park Hyatt Paris Vendôme, pays tribute to the great couturier Jeanne Paquin, whose workshops were located at 5 rue de la Paix, by evoking her elegant drapery. The log has been crafted with precision combining the freshness of pear in the centre with a light hazelnut biscuit and hazelnut paste. A mousse with 72% Venezuelan chocolate and a pear and brandy cream complete this airy and refined creation.

HÔTEL LUTETIA RIVE GAUCHE

Nicolas Guercio, the head pastry chef at the Lutetia, draws inspiration from the elegant art deco of this iconic hotel on the Left Bank to create a Yule log with distinctive golden lines and angles. The inside of the log contains a Komuntu dark chocolate mousse, a hazelnut dacquoise with fleur de sel, a creamy filling with Valrhona milk chocolate, and a praline enhanced with dark truffle from the Perigord.

FOUR SEASONS HOTEL GEORGES V

At the palace Four Seasons Hotel Georges V, the head pastry chef Michael Bartocetti has unveiled a creation with exquisite curves in rich, brown, sparkling, and amber colours. The airy composition of this Yule log consists of a crunchy almond and lime shortbread, a creamy pine-infused mousse, and a biscuit with almonds from Provence, together with chestnut honey jam, Sicilian olive oil, and citrus fruit confit.

HÔTEL CHEVAL BLANC PARIS

For the Yule log at the Cheval Blanc, the head pastry chef Maxime Frédéric presents a delightful gourmet creation that is a nod to childhood and Christmas toys with a chocolate rocking horse. The outer layer in chocolate imitates the grain of wood, while the rocker is made of crispy Gianduja. In the centre, a gift decorated with Samaritaine medallions is filled with dacquoise biscuit, hazelnut praline, shortbread, a light mousse, and vanilla caramel.

HÔTEL DE CRILLON, A ROSEWOOD HOTEL

In keeping with tradition, the head pastry chef at the Hôtel de Crillon, Matthieu Carlin, serves up a Yule log inspired by a traditional log covered with a ‘bark’ made using cocoa beans from 1955 from Chocolaterie Robert for a 75% dark chocolate. Inside is a mousse of cocoa nibs combined with a Sacher biscuit, a creamy chocolate filling flavoured with lime zest and a praline with cocoa bean crunch.

HÔTEL LE MEURICE

Head pastry chef at Le Meurice, Cédric Grolet celebrates the arcades typical of the Rue de Rivoli, the street on which the hotel stands, with a Yule log with coloured caramel hazelnut tints, decorated with the famous arches of one of Paris' most important thoroughfares. Under a hazelnut milk-infused mousse, a hazelnut praline fleur de sel crunch is combined with vanilla caramel, set on a hazelnut biscuit, enhanced with hazelnut praline from the Manufacture Alain Ducasse.

HÔTEL THE PENINSULA PARIS

Recently awarded the Lebey prize for the best dessert 2022, Anne Coruble, head pastry chef at The Peninsula Paris, offers a trio of Yule logs with surprising and elaborate flavours for a bold gustatory discovery. One is a combination of yoghurt, blackcurrant, and fennel, a second one, vanilla and tobacco and a third, truffle and hazelnut.

HÔTEL SOFITEL LE SCRIBE OPÉRA

Head pastry chef at the Sofitel Le Scribe Opéra, Antoine Bouchard glorifies this famous hotel with a log in its image, an airy gluten-free dessert with a chocolatey-coffee flavour. Waiting to be discovered beneath a crunchy dark chocolate façade: a brownie biscuit, coffee crunch, an unctuous creamy chocolate filling made from Nicaraguan cocoa, coffee caramel, with a coffee cream and a cappuccino moussegrand cru Terre de café Himalaya.

HÔTEL ROYAL MONCEAU RAFFLES PARIS

Quentin Lechat, the head pastry chef at the Royal Monceau Raffles Paris, offers a creation of 5 complementary flavours presented in the form of 5 superimposed bars. The vanilla bar has a vanilla milk jam biscuit with a hint of amber rum and panna cotta; the milk chocolate bar has a tonka panna cotta brownie, a puffed rice biscuit and a chocolate mousse; the tatin bar has a buckwheat biscuit with caramel and salted butter, apple tatin and yoghurt mousse; the praline bar has a Dacquoise biscuit with orange praline and lemon marmalade; and the intense chocolate and cranberry bar has a cocoa biscuit, praline, chocolate mousse and cranberry jelly.

PHILIPPE CONTICINI

Top names in the world of patisserie are also tantalizing the taste buds of food lovers with their mouth-watering creations. Philippe Conticini, for example, presents his three gourmet Yule logs for Christmas: The Yule log dulce, yuzu and kumquat, the Yule log chocolate hazelnut, and the Yule log vanilla caramel. A fourth chestnut and clementine Yule log is also available and exclusive to Galeries Lafayette.

LADURÉE

The two yule logs by head pastry chef at Ladurée, Julien Alvarez, are based on the establishment’s emblematic macaron. The Impératrice Amande offers a crunchy almond and mango compote with yuzu juice, enhanced with cream and orgeat syrup, and covered with a thin chocolate almond coating; The Reine Saint-Honoré consists of crispy caramelized puff pastry and a choux pastry biscuit, combined with a creamy filling with roasted vanilla, and semi-salted butter caramel, covered with a vanilla chocolate coating.

LA MAISON DU CHOCOLAT

The Maison du Chocolat presents its Yule log Absolument Cadeaux in the form of 3 gift elements, one rectangular and two cube-shaped with a rich dark chocolate coating, and tied with chocolate ribbons (white, milk and strawberry). Inside, dark chocolate mousse from Cameroon, pecan nut praline and a creamy filling with salted butter caramel and a biscuit brownie with caramelized pecan powder.

MAISON LENÔTRE

The renowned maison Lenôtre pays tribute to mountain peaks and comforting milky flavours with the first signature creation by Etienne Leroy, the head creative patisserie chef and pastry world champion. For this Yule log Noël au Chalet, a hazelnut crunch and a ‘pain de Gênes’ biscuit with vanilla flavoured with a hint of 7-year-old rum contain a fondant heart of Bourbon vanilla from Madagascar and fleur de sel from the Camargue, a creamy filling and a milk mousse infused with cinnamon and toasted brioche. A chalet sculpted in dark chocolate (from Ghana, Sao Tomé and Tanzania) with a snow-covered roof of milk chocolate and marshmallow beautifully shelter the Yule log.

MAISON FOUQUET

Taking inspiration from its round boxes of chocolate, the maison Fouquet, a specialist in traditional praline, has created the Yule log Couronne, available in three flavours: Hazelnut, Coconut and Pistachio. Under a layer of meringue, the Couronne consists of biscuit combined with a caramel and puffed rice or pistachio spread, with either a hazelnut praline, a coconut praline, or a pistachio praline.
