"This yule-log, very flighty and feminine, contains a creamy heart of chestnuts, candied apples and a confit of yuzu and lime. This heart is surrounded by yuzu and milk chocolate ganache, a crispy caramelized pecans, the whole thing on a chocolate biscuit without chocolate flour... an elegant mix of intense softness both fondant and crunchy. The yule-Log cake is available for 6 or 8 people.
